The bread often becomes breadcrumbs or croutons for the next days dishes. The butter used in future sauteing or cooking. I've seen unfinished portions becoming part of another person's meal. I won't go on. You're right, 5 star joints have the same faults as 1 star places.

I too have worked in a few upscale restaurants as a young man and yes seen it too. Reused bread for croutons and reused butter. Its a common thing actually..

Well, I gotta say this, when I worked at Red Lobster, they NEVER would have done anything like that. They were really fussy. I've seen them throw away food that almost made me cry. I've never seen such waste til I worked there.
